I agree with you on the preparation of the Couscous. When friends tell me they made Couscous and followed the recipy on the package, I always asked them " so how was you Polenta ?".
I don't believe in those 5 minutes Couscous. Now there are people who started using microwave, that's not as bad as "adding water, salt and cover with foil and cook for 15 minutes" To sum it up, if you want a real Couscous there is no way around steaming it for 3 times of 20 minutes each or at least twice. Anyway, let's finish that ALgerian cookbook and show people how to do it the right way. Happy cooking comme dit Jacque Pepin.
